Làm đế bánh: Cho bánh quy vào túi nilon và đập vụn, hoặc bạn có thể cho vào máy xay thực phẩm cho nhanh. Đổ banh quy xay ra tô, cho 1/2 lượng bơ đã tay chảy vào, trộn đều. Trút hỗn hợp vào khuôn và ấn chặt xuống. Để lạnh khoảng 15 phút.
Bào vỏ 1 trái chanh và vắt lấy nước cốt của 5 trái chanh, bỏ hạt nếu có. Cho phần bơ tan chảy còn lại trộn cùng nước cốt chanh, trứng gà, lòng đỏ trứng gà, mật ong, vỏ chanh. Cho hỗn hợp vào nồi và đun với lửa nhỏ, khuấy đều cho hỗn hợp sánh đặc lại trong khoảng 10 phút.
Bọc phần chanh-trứng đó lại bằng màng bọc thực phẩm, đặt trong tủ lạnh để nguội bằng nhiệt độ phòng. Khi hỗn hợp nguội, bạn cho hỗn hợp trộn đều với phần kem phô mai. Trải phần hỗn hợp kem lên đến bánh, để lạnh qua đêm là có thể dùng.
