Thêm vào 1 lòng trắng trứng, ớt bột (tùy theo thích ăn cay hay không), trộn thật đều để các nguyên liệu quyện vào nhau. Đeo găng tay nylon, nắm thịt thành viên tròn, làm cho đến khi hết hỗn hợp thịt. Đun sôi chảo dầu ăn, thả viên thịt vào chiên khoảng 5-10 phút để thịt chín đều thì vớt ra.
Sả cắt vát, gừng cắt mỏng, lót vào đáy nồi, xếp thịt viên lên trên, thêm nước tương, 1 ít nước lọc, bật bếp đun khoảng 20 phút cho thịt ngấm.
