Món đậu hũ chiên trứng muối đơn giản và dễ làm, tưởng bình thường mà lại ngon không tưởng. Miếng đậu hũ vàng ruộm, điểm thêm chút hành xanh mướt mắt khiến món ăn có vẻ ngoài hấp dẫn. Lớp vỏ giòn mỏng bên ngoài quyện với cái bùi ngậy của trứng muối ôm trọn lấy cái mềm mịn của đậu hũ bên trong, lại dậy mùi thơm của tỏi phi đến nức mũi.

Đậu hũ cắt miếng vuông nhỏ cỡ 2cm. Lăn từng miếng đậu qua một lớp bột bắp rồi xếp ra đĩa hoặc mặt bàn có lót khăn giấy.

Làm nóng chảo sâu lòng hoặc nồi nhỏ với lượng dầu ngập mặt đậu khi chiên, thả đậu vào chiên trên lửa vừa cho đến khi lớp vỏ ngoài ngả màu vàng nâu. Vớt đậu ra đĩa có lót sẵn giấy thấm dầu cho ráo bớt dầu thừa.

Lòng đỏ trứng cho ra bát, dùng muỗng nhỏ hoặc nĩa tán nhuyễn. Làm nóng chảo trở lại với chút dầu láng mặt, cho trứng muối và tỏi bằm vào đảo thơm.

Đảo cho đến khi trứng mịn và nổi bọt thì trút đậu vào, tiếp tục đảo đều hoặc dùng tay cầm cán chảo xóc đều trong giây lát cho lớp trứng bao đều quanh miếng đậu thì tắt lửa.

Gắp đậu ra đĩa, rắc hành lá xắt nhỏ lên trên mặt.
